Harris Award Lecture
Please plan to attend the 2009 Harris Award
Lecture on Tuesday, November 17th. Dr. Michael P.
Doyle is presenting "From Burgers to Tilapia: The Increasing
Challenges to Ensuring Safe Foods." Dr. Doyle is the 2009
Harris Award winner and is a Regents Professor of Microbiology
and Director, Center for Food Safety, Department of Food Science
and Technology, University of Georgia. The seminar will take
place at noon in Room 118 of the Parker Food Science Building
with a lunch reception immediately after.

Industries Center at OSU will be the seminar speaker and his
presentation is "OSU Food Industries Center: Building Bridges

Scientist Uses High Pressure to Keep Food Safe -- for a Long,
Long Time
COLUMBUS, Ohio -- Ohio State University food science
researcher V.M. "Bala" Balasubramaniam isn't feeling
pressure to perform. He's using pressure.
The associate professor of food science and
technology studies how high-pressure food processing
can be used and refined to preserve low-acid foods,
allowing them to stay fresh for extensive periods
while inactivating the bacteria and other pathogens
that would otherwise make them unsafe.

and his presentation is "Pressure Assisted Thermal
Sterilization of Low Acid Foods." The seminar will take

the USDA National Institute for Food and Agriculture, is the
seminar speaker and her presentation is "Environmentally
Transmitted Pathogen Research and the new National Institute for
Food and Agriculture." The seminar will take place at noon
in Room 118 of the Parker Food Science Building.

Congratulations to the proposal Food
Innovation Center: Foods for Global Security, Safety, and Health
Promotion on being awarded funding by the Office of Academic
Affairs and the Office of Research.
The Food Innovation Center is
led by principal investigator, Food Science professor Ken Lee,
College of Food, Agricultural, and Environmental Sciences, with
more than 80 faculty members from 12 colleges. The Food
Innovation Center brings together a multidisciplinary group of
researchers to attack the food crisis by addressing four themes:
designing foods for health, ensuring food safety, advancing
biomedical nutrition in disease prevention and health promotion,
and global food strategy and policy.

Congratulations to Assistant
Professor Jianrong Li on his first USDA Grant! His grant
proposal with co-PI Mo Saif, is titled
“Methyltransferase-defective recombinant viruses as live
candidates for avian metapneumovirus: a jump from theory to
practice.”
This grant was ranked number 1 out of 83 in the Agriculture and
Food Research Initiative Program: Animal Health and Well-Being.

How Did You Spend Your Summer? Two
Buckeyes Learned from NASA Scientists.
HOUSTON, Texas -- Two Buckeyes --
one a recent graduate, another entering a master's program this
fall -- joined forces with NASA scientists this summer through a
National Space Biomedical Research Institute (NSBRI) internship
program.
Setsuko Kamotani, who received her master's degree in food
science and technology in June, and Jessica Cooperstone, who
will enter the same program this fall, are two of just 18
interns in the program this year. Both worked with scientists in
the Space Food Systems Laboratory at NASA Johnson Space Center (JSC)
in Houston.

Gary

23rd Edward F. Hayes Graduate
Research Forum
Veena Prabhakar, M.S. student,
received first place in the FAES and Human Ecology Oral
Competition at the 23rd Edward F. Hayes Graduate Research Forum
for her paper titled “Rapid quantification of dipicolinic acid
in processed Bacillus spores using infrared spectroscopy.” Veena
is advised by Luis Rodriguez-Saona. Congratulations, Veena!

2009 CFAES Undergraduate Research
Forum
Congratulations to food science undergraduate, Kurtis Feng, for
placing first in the Food and Meat Science category at the
recent CFAES Undergraduate Research Forum held on April 21. The
title of his paper was “Vesicular stomatitis virus expressing
Hepatitis E virus-like particles: A new live vaccine candidate
for non-cultivable foodborne viruses.” His adviser is Jianrong
Li.

OARDC Research Conference
The Department of Food Science and Technology was very well
represented by our graduate students at the OARDC Annual
Research Conference yesterday. FST students presented 13 of the
54 posters on display – the largest number from any department.
Congratulations to the award winners.
PhD poster division:
Rockendra Gupta, 2nd place. The title of his poster was
"Combined pressure temperature effects on lycopene stability and
isomerization in tomato juice." Adviser is V.M. Balasubramaniam.
Gregory Hostetler, 3rd place. The title of his poster was
“Effects of juice processing on anti-inflammatory flavonoids in
plant foods.” Advisor is Steve Schwartz.
MS poster division:
Sarrah Hassel, 3rd place. The title of her poster was
“Application of a handheld infrared sensor for monitoring the
distribution of vitamins and minerals in fortified corn-based
snacks.” Adviser is Luis Rodriguez-Saona.

Associate Professor Bala
Balasubramaniam has been elected as “Chair-elect” for IFT
Nonthermal processing division (http://www.ift.org/divisions/nonthermal/objectives.html)
.
In this 3-year elected leadership position Dr. Bala will serve
the division as chair-elect, chair and past-chair. The division
membership include scientists and engineers from industry,
government and academia interested in advancement of nonthermal
food preservation technologies.

Ken Lee named ACE Fellow
Ken Lee, Professor of Food Science and Technology, has been
named an Academic Fellow of the American Council on Education
(ACE) for the 2009-2010 academic year. The Academic Fellows
Program, established in 1965, is designed to strengthen
institutions and leadership in American higher education by
identifying and preparing promising senior faculty and
administrators for responsible positions in college and
university administration. Lee was one of 38 Fellows selected in
a national competition.

Hua Wang receives funding from
Battelle Endowment
Hua Wang, Associate
Professor of Food Science and Technology, was one of five OSU
faculty awarded a grant from the Battelle Endowment for
Technology and Human Affairs for her research titled “Antibiotic
Resistance Transmission through the Global Food Chain: Public
Health Impact and Intervention Strategies.”

Congratulations to OSU Graduate
Student Setsuko Kamotani who is selected as recipient of the
2009 Sylvia Rowe Fellowship of the International Food
Information Council. This is a highly competitive honor named
after one of the nation's leading communicators of factual
science based food information. Setsuko joins the DC team this
June 2009.

Congratulations to graduate student,
Lizanel Felciano, for winning the Italian Packaging Technology
Award 2009 for her research on "Color Changing Plastics for Food
Packaging." The award includes a trip to Italy to tour packaging
manufacturing companies. Lizanel is advised by Melvin Pascall.

Dr. Jim Harper was recently
recognized for his outstanding contributions to the development
of the whey protein industry in New Zealand at the Inaugural
Riddet Institute National Conference “The Future of Food” held
February 16-18, 2009 at Massey University. The Wednesday session
was dedicated to Dr. Harper and titled The Harper Symposium.
Speakers from across the globe focused on the latest
developments in dairy protein chemistry.

Congratulations to Ph.D. student, Yu
Zhang! Yu was recently awarded a Fellowship from the OSU Center
for RNA Biology for 2009 based on his outstanding research
proposal. RNA Fellows receive a stipend of $25,000 plus tuition
and fees. Yu works for Dr. Jianrong Li, Assistant Professor.

Nelson as the
2008 Harris Award for Excellence in Food Science and Technology
winner. Dr.
Nelson will accept the award on February 25, 2009. A reception

followed by Dr. Nelson's presentation at 4:30 pm in 103 Kottman

D.D. Williamson, Louisville, Ky., has hired He
Jian, Ph.D., to its Science and Innovation team. The new food
science position was created to add strength to Science and

Michael Mangino, Professor Emeritus,
has been awarded the 2008 Outstanding Alumni Award from the
Department of Food Science and Human Nutrition at Michigan State
University. He was presented the award on October 10 during the
J. Robert Brunner Lecture and Memorial Protein Symposium in East
Lansing.

Dr. Jiyoung Lee, Assistant
Professor, joined the Department of Food Science and Technology
on September 1, 2008. Dr. Lee was hired through the Targeted
Investment in Excellence Public Health Preparedness Initiative
and has a joint appointment in FST (30%) and Environmental
Health Sciences (70%) in the College of Public Health. Her
research is in the area of environmental microbiology. Dr. Lee
comes from Ann Arbor, Michigan where she worked for a
biotechnology company developing rapid molecular techniques to
detect pathogens in food and water.
